Ostrica con mela – oysters with persimmon, chili and avruga caviar

Tortino con tonno – tuna tartlets with squacquerone and bottarga

Cappelletti di castagne – chestnut cappelletti with porcini and freshly shaved truffles

Quaglia arrostito – stuffed quail with braised spinach pine nuts, raisins and jus

Pesce al forno – Murray cod with leeks and broth

Zabaglione with amaretti, candied lemon peel and aceto balsamico tradizionale
