Some exquisite foods have been prepared the same way for the last century. For Olasagasti anchovies, it’s an artisian fishing family that have remained faithful to preserving the highest-quality fish from the Spanish coastline.

Olasagasti anchovies are plucked from the Cantabrian Sea, off the northern coast of Spain, near the southwest side of France. Just like they were centuries ago, their plump and meaty bodies are hand-pressed with salt.

After months and months of ripening, the anchovies are washed, the fillets separated, and the flesh dried by hand with a cloth. Any remnants of thorns, skin and salt are removed, then the anchovies are placed in layers inside cans, separated by food paper. This work is done by hand, anchovy by anchovy, fillet by fillet.

Paired with creamy eggs, crunchy grilled bread, and sweet and tangy caramelised fennel purée cooked with aceto balsamico di Modena, these morsels are a Nonna-approved way to start your meal at Little Black Pig.
