Originating in southern Piedmont, Agnolotti del Plin is the origami cousin of ravioli. Literally translating to ‘pinch’, this pasta is laborious to make and normally reserved for the local osteria or special occasions and extra-loving Nonnas.

Agnolotti makes a regular appearance at Little Black Pig, accompanied by a robust collection of fillings and always paired with caramelised burnt butter and sage.

This week’s Agnolotti del Plin is stuffed with marrow-rich veal shin, umami porcini mushrooms and the nutty flavour of Parmigiano Reggiano.

These lovingly pinched, lolly-in-a-wrapper pasta parcels are the perfect accompaniment for an indulgent mid-week lunch!
