Raviolone di aragosta – raviolone filled with lobster meat, chives, lemon with Yarra Valley smoked salmon caviar and lobster head bisque

Spaghetti con granchio e vongole – hand cut squid ink spaghetti with Shark Bay blue swimmer crab meat, Cloudy Bay clams, chili, anchovies, cherry tomato and bottarga

Pesce al forno – oven baked Riverina Murray cod with braised florence fennel, spinach, zucchini, lemon and olive salsa
