The best Venetian snacks are made from sweet king prawns and your mother’s garden. Made to eat with your hands, this cicchetti can be savoured or shared.

The shells are handmade, with each crust nipped by our chef’s fingers.

If not for creative thinking, the filling of prawns, asparagus and peas could be dry. By caramelising cauliflower in butter, this simple cruciferous develops the depth of flavour required to carry the other ingredients.

Finally, the acidic black garlic gel cuts through the creaminess of the cauliflower purée to create an explosion of flavours, all in one delicious bite.
