Heralding the onset of the festive season, panettone is a traditional Christmas sweet bread made with simple ingredients and cedro – the candied rind of a large Sicilian lemon. Said by bakers to be infuriating to make, it defies every rule of breadmaking.
These ancestral breads were introduced to Europe in the Middle Ages, more than 500 years ago. Originally baked by ancient Romans as ritual offerings to their gods, the panettone’s simple ingredients belie its extravagant taste. Light as a vanilla bean and buttery without being rich, panettone melts in your mouth like gelato on a hot day.
The Milanese eat their panettone with a custardy zabaglione, an ethereal dessert made by whisking together egg yolks, sugar and wine – or in Little Black Pig’s kitchen, Don Giovanni Limoncello Liqueur.
