Bistecca di manzo – chargrilled pasture-fed black angus 350gm rib eye with Swiss mushrooms, silverbeet and burnt truffle butter.

Deep in the Parwan Valley, 45km west of Melbourne’s CBD, up to 25,000 livestock graze on 4,000 acres of Parwan Prime family-owned land.

Truly paddock to plate, the bistecca di manzo arrives at Little Black Pig with deep, white valleys of fat. Twice-cooked, it’s first seared in a smoking hot pan for caramelisation and fat rendering, then transferred to the chargrill for that smoky flavour.

The tenderness of our black angus begins with Parwan Prime’s respect and care for their livestock. Parwan Prime do not export their meat - proof that the best Australian meat is not sent overseas.

Sautéed Swiss brown chestnut mushrooms have a gentle, earthy flavour. New-season truffles are grated then slathered in butter and cooked for an hour before mise en place. This produce comes together in an umami harmony to create a flavour-balanced celebration of that cow from Parwan Valley.
